Ingredients
For the Stew

2 tbsp coconut oil

1 large red onion, thinly sliced

5 garlic cloves, minced

1 tbsp freshly grated ginger

1 red bell pepper, diced
-
1 yellow bell pepper, diced
-
1 large sweet potato, peeled & cubed
-
1 cup cherry tomatoes, halved
-
1 cup okra, chopped
-
1 cup sliced plantains (semi-ripe)
-
1 can (14 oz) full-fat coconut milk
-
2 cups vegetable or chicken broth
-
2 tbsp tamarind paste
-
1 tbsp African bird’s eye chili paste (or substitute mild chili paste)
-
1 tsp smoked paprika
-
1 tsp coriander powder
-
½ tsp turmeric
-
Salt & cracked black pepper to taste
-
½ cup chopped cilantro
-
Juice of ½ a lime
Baobab Dumplings
-
1 cup cassava flour
-
2 tbsp baobab fruit powder
-
¼ cup warm water
-
Pinch of salt
-
1 tbsp coconut oil
Instructions
1. Build the Savanna Aromatics
-
Preheat the Nutri-Stahl 7QT over medium heat for 3 minutes.

Add coconut oil, then sauté onion, garlic, and ginger until fragrant and lightly caramelized.
2. Create the Base Layers
-
Add bell peppers, sweet potato, okra, tomatoes, and plantains.
-
Sauté for 5 minutes to develop depth and slight browning.
3. Add the Liquid Gold
Stir in:

coconut milk
-
broth
-
tamarind paste
-
chili paste
-
smoked paprika
-
coriander
-
turmeric
-
salt & pepper
Bring to a gentle simmer.
4. Form the Baobab Dumplings

Mix cassava flour, baobab powder, salt, and warm water.

Add coconut oil and knead until a soft dough forms.
-
Roll into small balls (1 inch).
5. Let the 7QT Do Its Magic
-
Drop dumplings gently into the simmering stew.
-
Cover with the Nutri-Stahl lid.
-
Reduce heat to low and cook for 25–30 minutes, until dumplings float and stew thickens beautifully.
