Aussie Pumpkin & Sweet Potato Soup

Ingredients:

  • 1 cup butternut pumpkin, diced

  • 1/2 cup sweet potato, diced

  • 1/4 cup carrot, diced

  • 1/2 small brown onion, finely chopped

  • 1 clove garlic, minced

  • 1 1/2 cups vegetable broth (or water)

  • 1/4 cup coconut milk (or heavy cream)

  • 1/2 tsp ground nutmeg

  • 1/2 tsp salt (adjust to taste)

  • 1/4 tsp black pepper

  • 1 tbsp olive oil

  • Fresh parsley or chives for garnish

Instructions:

  1. Preheat & Sauté:

    • Heat your Nutri-Stahl 1 QT saucepan on medium-low heat.

    • Add olive oil and sauté the onion and garlic until translucent.

  2. Add Vegetables & Simmer:

    • Add pumpkin, sweet potato, and carrot. Stir for a minute.

    • Pour in vegetable broth, cover with the lid, and bring to a gentle simmer.

    • Cook for 15-20 minutes or until the vegetables are soft.

  3. Blend & Finish:

    • Remove from heat and blend until smooth (use an immersion blender or let it cool slightly and blend in a regular blender).

    • Stir in coconut milk, nutmeg, salt, and pepper.

  4. Serve & Enjoy:

    • Pour into bowls, garnish with fresh parsley or chives, and serve hot!
