Ingredients:

1 cup butternut pumpkin, diced

1/2 cup sweet potato, diced

1/4 cup carrot, diced

1/2 small brown onion, finely chopped

1 clove garlic, minced

1 1/2 cups vegetable broth (or water)

1/4 cup coconut milk (or heavy cream)

1/2 tsp ground nutmeg
-
1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

1 tbsp olive oil
-
Fresh parsley or chives for garnish
Instructions:

Preheat & Sauté:

Heat your Nutri-Stahl 1 QT saucepan on medium-low heat.

Add olive oil and sauté the onion and garlic until translucent.

Add Vegetables & Simmer:

Add pumpkin, sweet potato, and carrot. Stir for a minute.

Pour in vegetable broth, cover with the lid, and bring to a gentle simmer.

Cook for 15-20 minutes or until the vegetables are soft.

Blend & Finish:

Remove from heat and blend until smooth (use an immersion blender or let it cool slightly and blend in a regular blender).

Stir in coconut milk, nutmeg, salt, and pepper.
