4 boneless chicken thighs (skin-on or skinless, your choice)

2 medium sweet potatoes, peeled and cubed

1 ripe mango, cubed

1 red bell pepper, sliced

1 small red onion, sliced

3 garlic cloves, minced

1-inch fresh ginger, grated
Sauce Base:

1 can (14 oz) coconut milk
-
1 tbsp tomato paste
-
2 tsp Cajun seasoning
-
1/2 tsp cinnamon
-
1/2 tsp smoked paprika

Salt and black pepper to taste

1 tbsp brown sugar or honey
-
Juice of 1 lime
Garnish (optional):

Fresh cilantro

Lime wedges

Toasted coconut flakes
Instructions:
Step 1: Brown the Chicken

Preheat your Nutri-Stahl 6 QT pot on medium heat.

Add a touch of oil, then place the chicken thighs skin-side down.

Sear for 3–4 minutes per side until golden brown. Remove and set aside.
Step 2: Build the Flavor Base

In the same pot, sauté garlic, ginger, red onion, and bell pepper until fragrant (2–3 minutes).

Stir in Cajun seasoning, paprika, cinnamon, and tomato paste. Cook for another 1–2 minutes.
Step 3: Simmer the Sauce

Pour in the coconut milk, lime juice, and brown sugar/honey. Stir well and bring to a simmer.

Add cubed sweet potatoes and a pinch of salt. Cover and let simmer for 10 minutes.
Step 4: Add Chicken & Mango

Nestle the browned chicken thighs back into the pot on top of the sweet potatoes.

Scatter the mango chunks over the top.

Cover and simmer gently for 20–25 minutes until chicken is cooked through and sweet potatoes are fork-tender.
