Cape Malay Spiced Yellow Rice (South African Heritage Dish)

Ingredients (serves 2–3)

  • 1 cup basmati or long-grain rice

  • 2 cups water

  • 1 tbsp butter or ghee

  • 1 small cinnamon stick

  • 2–3 whole cloves

  • 3 cardamom pods, lightly crushed

  • ½ tsp ground turmeric

  • 1 tbsp sugar (optional, for authentic sweetness)

  • ½ tsp salt

  • 2 tbsp golden raisins (sultanas)

Instructions

  1. Rinse the Rice
    Wash rice under cold water until the water runs clear.

  2. Prepare the Nutri-stahl 1 QT
    Place the saucepan on medium heat. Add butter/ghee, then sauté cinnamon stick, cloves, and cardamom for 30 seconds until aromatic.

  3. Add Rice & Spices
    Stir in the rice, coating with the spiced butter. Add turmeric and mix well for a bright yellow color.

  4. Simmer & Steam
    Add water, salt, and sugar. Stir once, then bring to a gentle boil. Reduce heat to low, cover with the lid, and let it steam for 15–20 minutes.

  5. Finish
    Add raisins, fluff gently with a fork, and cover again for 2 minutes to let the raisins soften in the steam.
