Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach (fresh or frozen)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 8 oz fettuccine or penne pasta
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional for spice)
- Salt & pepper to taste
- Fresh basil, chopped (for garnish)
Instructions:
-
Cook the pasta: In your Nutri-Stahl 6 QT, bring water to a boil. Cook the pasta according to the package directions, then drain and set aside.
-
Prepare the chicken: While the pasta is cooking, heat the olive oil in your Nutri-Stahl 6 QT over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the pot and set aside. Slice into strips when cooled.
-
Make the sauce: In the same pot, add garlic and cook for 1-2 minutes until fragrant. Stir in the sun-dried tomatoes and spinach and cook until the spinach wilts (about 2 minutes).
-
Add liquids: Pour in the chicken broth and bring to a simmer. Let it cook for 2-3 minutes, then add the heavy cream. Stir in the Parmesan cheese and let the sauce simmer for 5-7 minutes until it thickens slightly.
-
Combine: Add the cooked pasta to the sauce and stir to coat. Add the sliced chicken on top and mix everything together. If desired, sprinkle with red pepper flakes for a bit of heat.
-
Garnish and serve: Top with fresh basil and serve hot!
