Ingredients:

2 tbsp niter kibbeh (or clarified butter)

1 large red onion, finely chopped

4 garlic cloves, minced

1 tbsp fresh ginger, grated

2 tbsp Berbere spice blend

1 ½ cups red lentils

3 cups vegetable broth or water

Salt to taste

Lemon wedges and injera for serving
Instructions:

Heat niter kibbeh in your Nutri-Stahl 6 QT. Sauté onion until deep golden. Add garlic and ginger.

Stir in berbere spice and toast briefly.

Add lentils and broth. Bring to a simmer, stirring often.

Cook uncovered for 25–30 minutes, or until lentils are soft and thickened.

Serve with injera or rice and lemon wedges.
