Ethiopian Lentil & Berbere Stew (Misir Wot)

Ingredients:

  • 2 tbsp niter kibbeh (or clarified butter)

  • 1 large red onion, finely chopped

  • 4 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 2 tbsp Berbere spice blend

  • 1 ½ cups red lentils

  • 3 cups vegetable broth or water

  • Salt to taste

  • Lemon wedges and injera for serving

Instructions:

  1. Heat niter kibbeh in your Nutri-Stahl 6 QT. Sauté onion until deep golden. Add garlic and ginger.

  2. Stir in berbere spice and toast briefly.

  3. Add lentils and broth. Bring to a simmer, stirring often.

  4. Cook uncovered for 25–30 minutes, or until lentils are soft and thickened.

  5. Serve with injera or rice and lemon wedges.
