Exotic Russian Mushroom Solyanka (Hearty Sour Soup)

Ingredients (Serves 2–3 in Nutri-Stahl 1 QT):

  • 2 tbsp sunflower oil (or butter for richness)

  • 1 small onion, finely diced

  • 1 carrot, grated

  • 1 small dill pickle, finely chopped

  • 1 cup assorted wild mushrooms (chanterelles, porcini, or shiitake), sliced

  • 1 small smoked sausage (or smoked turkey), sliced thin

  • 2 cups beef or vegetable broth

  • 1 tbsp tomato paste

  • 1 tsp smoked paprika

  • ½ tsp ground black pepper

  • 1 bay leaf

  • 4–5 black olives, sliced

  • 2 lemon wedges (for finishing)

  • Fresh dill, chopped (for garnish)

  • Sour cream (for serving)

Instructions (Nutri-Stahl 1 QT Method):

  1. Sauté the Base

    • Heat oil in the Nutri-Stahl 1 QT over medium heat.

    • Add onions and carrots, sauté until softened and lightly golden.

  2. Add Flavor Layers

    • Stir in chopped dill pickle, mushrooms, and smoked sausage.

    • Cook for 3–4 minutes until fragrant.

  3. Broth & Spices

    • Add tomato paste and smoked paprika, stirring well.

    • Pour in broth, add bay leaf, pepper, and olives.

    • Cover with lid and simmer on low for 20 minutes.

  4. Finishing Touch

    • Remove bay leaf.

    • Squeeze in fresh lemon juice just before serving.

  5. Serve

    • Ladle into bowls, top with a spoonful of sour cream, and garnish with fresh dill.

    • Enjoy with rye bread for a true Russian experience.
