French-Canadian Tourtière (Meat Pie)

Ingredients:

  • 1 lb ground pork

  • 1/2 lb ground beef (or veal for traditional flavor)

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 1/4 tsp ground allspice

  • 1/4 tsp nutmeg

  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • 1/2 cup beef broth or water

  • 1/2 cup mashed potatoes (acts as a binder)

  • 2 pre-made or homemade pie crusts (top and bottom)

  • 1 egg, beaten (for egg wash)

Instructions:

  1. Sauté Meat and Vegetables
    In your Nutri-Stahl 6 QT Stockpot, cook the ground pork and beef over medium heat. Break it up finely with a wooden spoon. Add onions and garlic and sauté until soft and meat is no longer pink.

  2. Add Spices and Simmer
    Stir in cinnamon, cloves, allspice, nutmeg, salt, and pepper. Pour in beef broth or water. Simmer uncovered for 25 minutes, stirring occasionally.

  3. Bind with Potatoes
    Stir in the mashed potatoes. Mix until everything is well combined and thickened. Remove from heat and let cool slightly.

  4. Assemble the Pie
    Preheat oven to 375°F (190°C). Line a 9-inch pie plate with the bottom crust. Fill with meat mixture. Cover with top crust, crimp edges to seal, and cut slits in the top to vent. Brush with egg wash.

  5. Bake
    Bake in the preheated oven for 40–45 minutes or until golden brown. Let rest 10 minutes before slicing.
