Maple Bison & Wild Rice Skillet
Ingredients:

1 lb ground bison meat (or lean ground beef if unavailable)

1 tbsp sunflower oil or bear fat (traditional alternative)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup wild rice, rinsed
-
2 ½ cups low-sodium beef broth
-
1 tsp dried juniper berries (optional, for authentic wild flavor)

½ cup dried cranberries or saskatoon berries
-
1 tbsp pure maple syrup
-
½ tsp smoked paprika
-
½ tsp dried thyme
-
Salt and freshly ground black pepper, to taste

Fresh parsley or spruce tips for garnish (optional)
Instructions:

Preheat your Nutri-Stahl Large Skillet over medium heat.

Add sunflower oil, then sauté the onions and garlic until soft and fragrant, about 3–4 minutes.

Add the ground bison and cook until browned, breaking it apart with a wooden spoon. Season with salt, pepper, and smoked paprika.

Stir in the wild rice, juniper berries, and thyme. Toast the rice for 1–2 minutes with the meat mixture.

Pour in the beef broth and bring to a simmer. Reduce heat to low, cover the skillet with the lid, and cook for 25–30 minutes or until the rice is tender and liquid is absorbed.

In the final 5 minutes, stir in the cranberries and maple syrup. Cover again and let the flavors meld.

Remove from heat and let rest for 5 minutes. Fluff with a fork.

Garnish with chopped parsley or spruce tips, if available, for a foraged Canadian touch.
