Mexican Beef and Rice

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup long-grain rice
  • 1 ½ cups beef broth
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

  1. Sauté the Vegetables:
    Press the Sauté function on the Nutristahl 12QT. Once it's hot, add the olive oil. Sauté the chopped onion, garlic, and bell pepper until softened, about 5 minutes.

  2. Brown the Ground Beef:
    Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 5–7 minutes. Drain excess fat if needed.

  3. Add Spices and Rice:
    Stir in the chili powder, cumin, paprika, salt, and pepper. Then, add the rice and mix until the rice is well coated with the spices.

  4. Add Liquids and Simmer:
    Pour in the diced tomatoes (with their juice), green chilies, and beef broth. Stir to combine and scrape up any brown bits from the bottom of the pot.

  5. Pressure Cook:
    Seal the pressure cooker lid and set it to cook on high pressure for 10 minutes.

  6. Natural Release:
    After the cooking time is complete, let the pressure naturally release for 5 minutes. Then, carefully release any remaining pressure.

  7. Finish and Serve:
    Open the lid, fluff the rice with a fork, and garnish with fresh cilantro. Serve with lime wedges for an added burst of flavor.
