Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 cup long-grain rice
- 1 ½ cups beef broth
- 1 can (4 oz) diced green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions:

Sauté the Vegetables:
Press the Sauté function on the Nutristahl 12QT. Once it's hot, add the olive oil. Sauté the chopped onion, garlic, and bell pepper until softened, about 5 minutes. -
Brown the Ground Beef:
Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 5–7 minutes. Drain excess fat if needed. -
Add Spices and Rice:
Stir in the chili powder, cumin, paprika, salt, and pepper. Then, add the rice and mix until the rice is well coated with the spices. -
Add Liquids and Simmer:
Pour in the diced tomatoes (with their juice), green chilies, and beef broth. Stir to combine and scrape up any brown bits from the bottom of the pot. -
Pressure Cook:
Seal the pressure cooker lid and set it to cook on high pressure for 10 minutes. -
Natural Release:
After the cooking time is complete, let the pressure naturally release for 5 minutes. Then, carefully release any remaining pressure. -
Finish and Serve:
Open the lid, fluff the rice with a fork, and garnish with fresh cilantro. Serve with lime wedges for an added burst of flavor.
