Mexican Chicken Fajita Skillet

Ingredients:

  • 2 large chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil (or use broth for a no-oil method)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Warm tortillas (for serving)
  • Optional toppings: avocado slices, sour cream, shredded cheese, salsa

Instructions:

  1. Preheat the Skillet
    Heat the Nutri-Stahl Large Skillet over medium heat. If using oil, add it now; otherwise, use a small amount of broth.

  2. Cook the Chicken
    Add the sliced chicken to the skillet. Sprinkle with cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Sauté for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Remove from skillet and set aside.

  3. Sauté the Veggies
    In the same skillet, add the sliced bell peppers, onion, and garlic. Cook for about 5 minutes, stirring frequently, until the vegetables are tender-crisp.

  4. Combine & Finish
    Return the cooked chicken to the skillet and stir everything together. Squeeze fresh lime juice over the top and sprinkle with chopped cilantro.

  5. Serve & Enjoy!
    Serve hot with warm tortillas and your favorite toppings like avocado, sour cream, cheese, or salsa.
