Minestrone Soup

Ingredients:

  • 1/2 onion, diced

  • 1 clove garlic, minced

  • 1 carrot, diced

  • 1 celery stalk, diced

  • 1 small zucchini, diced

  • 1/2 cup green beans, trimmed and chopped

  • 1/2 cup cabbage, chopped

  • 1/2 can (7 oz) diced tomatoes (no salt added)

  • 1/2 cup canned kidney beans, drained & rinsed

  • 1/2 cup canned cannellini beans, drained & rinsed

  • 1/2 cup elbow macaroni or small pasta (whole grain or regular)

  • 2 cups vegetable broth or water

  • 1/2 tsp Italian seasoning

  • Salt & pepper, to taste

  • 1 tbsp olive oil (optional)

  • Fresh basil or parsley, chopped (for garnish)

  • Grated parmesan cheese (optional for serving)


🔥 Instructions:

  1. Preheat the Pan:

    • Heat your 3 QT Nutri-Stahl over medium heat for 2–3 minutes.

  2. Sauté Aromatics:

    • Add olive oil (optional), then sauté onions and garlic for 2–3 minutes.

  3. Layer the Veggies:

    • Add carrots, celery, zucchini, green beans, cabbage, and tomatoes (in that order).

    • Add beans, pasta, seasoning, and a pinch of salt & pepper.

  4. Add Broth:

    • Pour in 2 cups of broth or water—just enough to almost cover the ingredients.

  5. Cook Waterless Style:

    • Cover the pot with the lid. Wait for steam to start escaping the lid.

    • Then reduce heat to low and let simmer for 20–25 minutes.

  6. Check & Serve:

    • Check pasta and veggies for tenderness.

    • Adjust seasoning if needed.

    • Garnish with fresh basil or parsley, and top with grated parmesan if desired.
