Ingredients:

1/2 onion, diced

1 clove garlic, minced

1 carrot, diced

1 celery stalk, diced

1 small zucchini, diced

1/2 cup green beans, trimmed and chopped

1/2 cup cabbage, chopped

1/2 can (7 oz) diced tomatoes (no salt added)

1/2 cup canned kidney beans, drained & rinsed

1/2 cup canned cannellini beans, drained & rinsed
-
1/2 cup elbow macaroni or small pasta (whole grain or regular)

2 cups vegetable broth or water
-
1/2 tsp Italian seasoning

Salt & pepper, to taste

1 tbsp olive oil (optional)

Fresh basil or parsley, chopped (for garnish)

Grated parmesan cheese (optional for serving)
🔥 Instructions:

Preheat the Pan:

Heat your 3 QT Nutri-Stahl over medium heat for 2–3 minutes.

Sauté Aromatics:

Add olive oil (optional), then sauté onions and garlic for 2–3 minutes.

Layer the Veggies:

Add carrots, celery, zucchini, green beans, cabbage, and tomatoes (in that order).

Add beans, pasta, seasoning, and a pinch of salt & pepper.

Add Broth:

Pour in 2 cups of broth or water—just enough to almost cover the ingredients.

Cook Waterless Style:

Cover the pot with the lid. Wait for steam to start escaping the lid.

Then reduce heat to low and let simmer for 20–25 minutes.

Check & Serve:

Check pasta and veggies for tenderness.

Adjust seasoning if needed.

Garnish with fresh basil or parsley, and top with grated parmesan if desired.
