Ingredients:
- 2 boneless, skinless chicken thighs (or breasts)
- 1 tbsp olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground turmeric
- 1 tsp paprika
- 1 pinch of saffron (optional)
- 1 cup chicken broth (or water)
- 1 can (14 oz) diced tomatoes, drained
- ½ cup dried apricots, chopped
- ½ cup green olives, pitted and halved
- 1 tbsp honey
- 1 tbsp fresh ginger, grated
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
- ¼ cup slivered almonds (optional)

Preheat the Nutri-Stahl Skillet: Heat olive oil in the skillet over medium heat.

Brown the Chicken: Season the chicken thighs with salt, pepper, cumin, coriander, cinnamon, turmeric, paprika, and saffron (if using). Add the chicken to the skillet and sear on both sides for about 3-4 minutes until golden. Remove the chicken and set aside.

Sauté the Aromatics: In the same skillet, add the sliced onion and garlic. Sauté for 2-3 minutes until softened. Stir in the grated ginger, and cook for another minute until fragrant.

Simmer the Tagine: Add the diced tomatoes, chicken broth, dried apricots, green olives, and honey to the skillet. Stir to combine, and return the chicken to the skillet. Cover and let it simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.

Finishing Touches: Once the chicken is fully cooked, stir in the lemon juice. Taste and adjust the seasoning with salt and pepper.

Garnish and Serve: Sprinkle with fresh cilantro or parsley, and top with slivered almonds if desired. Serve with couscous, rice, or flatbread to soak up the delicious sauce.
