Steak & Quinoa Power Bowl

Ingredients:

  • 1 lb sirloin steak (or ribeye for extra flavor)
  • 1 cup quinoa, rinsed
  • 2 cups water or beef broth
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • 1 tbsp Worcestershire sauce
  • ½ cup cherry tomatoes, halved
  • ½ avocado, sliced (optional)
  • ½ cup feta cheese (optional)

Instructions:

  1. Cook Quinoa:

    • In the Nutri-Stahl Jumbo Skillet, bring 2 cups water or broth to a boil.
    • Add quinoa, reduce to low heat, cover, and simmer for 15 minutes or until fluffy.
    • Remove and set aside.
  2. Sear the Steak:

    • Heat the skillet to medium-high and add olive oil.
    • Season steak with salt, pepper, paprika, and cumin.
    • Sear for 3-4 minutes per side (or until desired doneness).
    • Remove from skillet, let rest, then slice thinly.
  3. Sauté the Veggies:

    • In the same skillet, add onions, mushrooms, and bell peppers.
    • Cook for 5 minutes, stirring occasionally.
    • Add garlic and Worcestershire sauce, cook for 2 more minutes.
  4. Assemble the Bowl:

    • Divide quinoa into bowls, top with steak and sautéed veggies.
    • Add cherry tomatoes, avocado, and feta if using.
