Tuscan Chicken & Vegetables

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth
  • 1 tsp red pepper flakes (optional)

Instructions:

  1. Preheat the Nutri-Stahl Large Skillet over medium heat. Add olive oil.
  2. Season the chicken with salt, pepper, and Italian seasoning. Sear in the skillet for about 5-7 minutes per side until golden brown. Remove and set aside.
  3. Sauté the garlic in the same skillet for 30 seconds, then add cherry tomatoes, bell peppers, zucchini, and mushrooms. Cook for about 5 minutes.
  4. Pour in the chicken broth and cream, stirring to combine. Let it simmer for 3 minutes.
  5. Return the chicken to the skillet, cover, and let it cook for another 10 minutes until the chicken is fully cooked through.
  6. Stir in the spinach and Parmesan cheese, letting the cheese melt into the sauce.
  7. Serve hot, garnished with extra Parmesan. Pairs well with crusty bread or pasta!
