Ingredients:

1.5 lbs pork belly or pork shoulder (cut into 1.5-inch cubes)

3 cloves garlic (minced)

2 shallots (minced)

1 tbsp fish sauce

1 tbsp soy sauce

1/2 tsp black pepper

1/2 tsp salt
-
2 tbsp sugar
-
1 cup coconut water (or water)

3 boiled eggs (peeled)

1 tbsp cooking oil
Instructions:

Marinate the Pork:
In a bowl, mix pork with fish sauce, soy sauce, black pepper, salt, and minced garlic/shallots. Let marinate for 20 minutes. -
Caramelize the Sugar:
Heat 2 tbsp sugar in the Nutri-Stahl 3 QT pot over medium heat until it melts and turns golden brown. Add 1 tbsp cooking oil to prevent burning. -
Sear the Pork:
Add the marinated pork and stir well to coat in the caramel sauce. Sear for 3-4 minutes until browned. -
Simmer:
Pour in 1 cup of coconut water (or water) and bring to a simmer. Reduce heat to low, cover, and let it cook for 40 minutes. Stir occasionally. -
Add Eggs:
Add boiled eggs and continue simmering for another 10-15 minutes until the sauce thickens. -
Serve:
Garnish with chopped green onions and serve with steamed jasmine rice.
