One-Pot Creamy Garlic Parmesan Chicken with Vegetables

Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 ½ cups baby spinach
  • 1 cup sliced mushrooms (optional)
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)
  • ½ cup chicken broth
  • 1 cup cooked pasta (optional, if making it heartier)

Instructions:

  1. Sear the Chicken

    • Heat olive oil in the Nutri-stahl large skillet over medium-high heat.
    • Season chicken with salt, pepper, and Italian seasoning.
    • Sear on each side for about 4-5 minutes until golden brown. Remove from pan and set aside.
  2. Sauté the Aromatics

    • In the same pan, melt butter over medium heat.
    • Add diced onions and cook until translucent (about 2 minutes).
    • Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add Vegetables & Broth

    • Toss in mushrooms and cherry tomatoes, sautéing for about 2 minutes until softened.
    • Pour in chicken broth to deglaze the pan, scraping up any browned bits.
  4. Make the Creamy Sauce

    • Lower heat and stir in heavy cream and parmesan cheese, mixing until smooth.
    • Add spinach and stir until wilted.
  5. Combine & Simmer

    • Return the seared chicken to the pan, cover, and let simmer for 5-7 minutes until the chicken is fully cooked.
    • If using pasta, stir it in at this stage.
  6. Serve & Enjoy!

    • Garnish with extra parmesan and red pepper flakes if desired.
    • Serve hot with a side of toasted bread or over rice/pasta.
