Ingredients
Protein & Base
- 2 lbs firm white fish (snapper, cod, or halibut), cut into chunks
- 1 lb shrimp, peeled and deveined
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
Liquids & Flavor
- 1 can (14 oz) coconut milk
- 1 cup diced tomatoes (fresh or canned)
- 2 tbsp lime juice (fresh)
- 2 tbsp olive oil
- 1 tbsp palm oil (optional, for authenticity)
Seasoning & Herbs
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp coriander
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Base
Preheat the Nutri-stahl 7 QT over medium heat. Add olive oil and sauté onions, garlic, and bell peppers until softened and fragrant.
2. Build the Flavor
Stir in paprika, cumin, and coriander. Add diced tomatoes and allow mixture to simmer for 3–5 minutes to deepen flavor.
3. Add Liquids
Pour in coconut milk and lime juice. Stir gently and bring to a light simmer.
4. Cook the Seafood
Layer the fish pieces into the pot and cover. Let simmer for 8–10 minutes.
Add shrimp, cover again, and cook an additional 4–5 minutes until shrimp turn pink and fish is tender.
5. Finish & Rest
Drizzle palm oil (if using) and sprinkle fresh cilantro on top. Turn off heat, keep covered, and let rest for 5 minutes to allow flavors to fully develop.
