Instructions

Heat your Nutri Stahl sauté pan over medium and add olive oil.

Add diced potatoes and cook until crisp and golden, stirring occasionally. Remove and set aside.

Reduce heat slightly, add butter, and let it melt gently.

Crack eggs directly into the pan. Season with salt, pepper, and thyme.

Cover with the Nutri Stahl lid for 1 minute to trap steam and set the whites while keeping yolks soft.

Uncover, add chives, and plate with the crispy potatoes.
