Feijoada (Brazilian Black Bean Stew)

Ingredients:

  • 1 lb black beans, rinsed and soaked overnight

  • 1/2 lb smoked sausage, sliced

  • 1/2 lb pork ribs

  • 1/2 lb beef chuck, cut into chunks

  • 1 small onion, chopped

  • 4 cloves garlic, minced

  • 2 bay leaves

  • 1 tbsp olive oil

  • 4 cups water or beef broth

  • 1 orange, cut in half (optional, helps balance flavors)

  • Salt & pepper to taste

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • Chopped cilantro, for garnish

Instructions:

  1. Sauté the aromatics

    • Set the Nutri-Stahl 6 QT to medium heat.

    • Add olive oil, then sauté onion and garlic until fragrant.

  2. Brown the meats

    • Add sausage, ribs, and beef chunks, searing until browned.

  3. Add beans & seasonings

    • Drain the soaked black beans and add them to the pot.

    • Stir in bay leaves, paprika, cumin, and salt & pepper.

  4. Cook

    • Pour in water or beef broth and place the orange halves on top (optional).

    • Cover and simmer for 1.5–2 hours on low-medium heat until beans and meat are tender.

  5. Serve

    • Remove orange halves and bay leaves.

    • Garnish with chopped cilantro and serve with steamed rice, collard greens, and orange slices.
