Ingredients:

1 lb black beans, rinsed and soaked overnight

1/2 lb smoked sausage, sliced

1/2 lb pork ribs
-
1/2 lb beef chuck, cut into chunks

1 small onion, chopped
-
4 cloves garlic, minced
-
2 bay leaves
-
1 tbsp olive oil
-
4 cups water or beef broth
-
1 orange, cut in half (optional, helps balance flavors)

Salt & pepper to taste

1 tsp smoked paprika
-
1/2 tsp cumin
-
Chopped cilantro, for garnish
Instructions:

Sauté the aromatics

Set the Nutri-Stahl 6 QT to medium heat.

Add olive oil, then sauté onion and garlic until fragrant.

Brown the meats
-
Add sausage, ribs, and beef chunks, searing until browned.

Add beans & seasonings
-
Drain the soaked black beans and add them to the pot.

Stir in bay leaves, paprika, cumin, and salt & pepper.

Cook

Pour in water or beef broth and place the orange halves on top (optional).

Cover and simmer for 1.5–2 hours on low-medium heat until beans and meat are tender.

Serve

Remove orange halves and bay leaves.

Garnish with chopped cilantro and serve with steamed rice, collard greens, and orange slices.
