Ingredients:
- ½ cup long-grain white rice (rinsed)
- ½ cup fresh cilantro (packed)
- ¼ cup fresh spinach (optional for extra color)
- ½ cup chicken or vegetable broth
- ½ cup water
- ¼ small white onion (chopped)
- ½ small jalapeño (seeded, optional for spice)
- 1 small garlic clove
- ½ tbsp olive oil
- ¼ tsp salt
- ½ lime (for serving)

Blend the Green Mixture
- In a blender, combine cilantro, spinach, broth, water, onion, jalapeño, garlic, and salt. Blend until smooth.

Preheat the Nutri-Stahl 1 QT Pot
- Heat ½ tbsp olive oil on medium heat.
- Add the rinsed rice and sauté for 1-2 minutes until slightly golden.

Cook the Rice
- Pour in the blended green mixture, stir, and bring to a gentle boil.
- Cover with the Nutri-Stahl lid, reduce heat to low, and let it cook for 15 minutes.
- Turn off heat and let it sit for 5 minutes before fluffing with a fork.

- Squeeze fresh lime juice over the rice before serving.
