Moroccan Apricot Chickpea Tagine

Ingredients (Serves 2–3)

Base

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced

Spice Blend

  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp ground ginger
  • ¼ tsp turmeric

Main Components

  • 1 can (15 oz) chickpeas, drained and rinsed
  • ½ cup dried apricots, halved
  • 1 cup diced tomatoes (fresh or canned)
  • ¾ cup vegetable broth

Flavor Balance

  • 1 tbsp honey
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Finish

  • Toasted sliced almonds
  • Fresh parsley or cilantro

Instructions

1. Gentle Sauté (Low–Medium Heat)
Preheat the Nutri-Stahl 1 QT on low heat. Add olive oil, then onion and garlic. Cook gently until softened and aromatic.

2. Bloom the Spices
Add cinnamon, paprika, cumin, ginger, and turmeric. Stir continuously for about 30 seconds to activate the spices.

3. Build the Tagine
Add chickpeas, apricots, tomatoes, and vegetable broth. Stir well to combine.

4. Covered Simmer
Cover with lid and reduce heat to low. Let simmer for 20–25 minutes. The Nutri-Stahl’s sealed environment will naturally thicken the sauce while preserving moisture.

5. Finish & Balance
Stir in honey and lemon juice. Adjust seasoning with salt and pepper.
