2 pounds beef chuck, cut into large cubes

2 tablespoons oil

1 large onion, chopped

4 garlic cloves, minced

1 tablespoon grated ginger

1 tablespoon tomato paste

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon turmeric

1 teaspoon crushed red pepper

2 tablespoons tamarind paste

2 cups beef broth

1 large sweet potato, peeled and cubed

1 tablespoon brown sugar

Salt and black pepper

Fresh cilantro or parsley for finishing
Instructions

Heat your Nutri Stahl Dutch oven or sauté pan over medium and add oil.

Brown the beef on all sides. Remove and set aside.

Add onions, garlic, and ginger to the pan. Cook until softened.

Stir in tomato paste, cumin, paprika, turmeric, and crushed red pepper. Let the spices bloom for 20 seconds.

Add tamarind paste, broth, and brown sugar. Stir to dissolve.

Return the beef to the pot and add the sweet potatoes.

Cover with the Nutri Stahl lid to create a sealed braising environment.

Reduce heat to low and cook for 60 to 75 minutes, until the beef is tender and the sauce has thickened.

Adjust seasoning and finish with herbs.
